Manok pansoh is a unique Iban dish mainly due to its nature of the chicken meat and other ingredients cooked in a bamboo. Small chicken pieces are marinated with lemongrass, tapioca leaves and chili are stuffed into the bamboo and then barbecued on an open fire. The bamboo served as a marinate container that seals in the flavour creating a tender and juicy chicken with the aroma of lemongrass and bamboo.
